My Perfect Garlic Mushrooms

This recipe for garlic mushrooms with lemon and thyme is my favorite.

This recipe is quick, easy and can be made for breakfast, lunch, or dinner. It combines garlic, lemon, and thyme well and goes well with mushrooms. Any type of mushroom can be used, but I chose to use white button mushrooms.

If they are small, I prefer to use them whole. However, you can also cut them into half or slice them. Although it may seem like there are a lot of mushrooms, they will reduce in size as they cook. You will first see some juice from the mushrooms, but this will disappear as they cook over medium heat.

These are some tips for making the best Garlic Mushrooms recipe.

  1. Whole mushrooms are my favorite, cut in quarters or halves. They're juicy and full of meaty flesh. But you can also use pre-sliced mushrooms.
  2. Do not overcrowd your pan. Overcrowding can cause mushrooms to steam instead of being sauteed, which will result in a soft texture. It is best to keep them in one layer.
  3. To achieve nice browning and caramelization, use medium to high heat. The mushrooms will steam if the heat is too low.
  4. Do not stir the mushrooms much. Allow them to brown on both sides for some time so that they don't get too stirred.
  5. Do not overcook mushrooms. They can turn rubbery and lose their taste.
  6. Although some recipes suggest that you saute the garlic before adding the mushrooms, I believe this is a bad idea. The garlic can burn and become bitter. I prefer to add garlic at a later stage.
  7. While fresh thyme is the best, dried can be used. Rosemary can be used as an alternative.
  8. Garlic mushrooms should be consumed immediately. Garlic mushrooms taste best when they are hot and fresh. Enjoy!

Ingredients

  • 2 tablespoons olive oil
  • 300-350 g / 10-11oz button mushrooms
  • Zest of half lemon
  • 1 teaspoon or more butter, ghee, or other plant-based alternatives
  • 5 fresh thyme sprigs (leaves or whole)
  • 2 garlic cloves peeled, sliced
  • 1/2 teaspoon salt
  • To taste: Cracked black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Heat the oil in a large skillet or frying pan on medium heat.
  2. Cook the mushrooms for about 3-4 minutes, turning once. They will shrink slightly and begin to release liquid. Turn them over and cook the other side for 2 minutes. We don't want them to be stirred too much at this point. Instead, we want them to turn a golden brown color.
  3. After the mushrooms are browned, add the butter, lemon zest, garlic, salt, and pepper.
  4. Stirring occasionally, cook for about a minute. Toss the mixture one more time with lemon juice.
